Vegan Vanilla Ice Cream

Ice cream without milk or eggs? It can be done! Here is our version, really delicious and with many flavours to try!





Finally, the heat has arrived and in these months we are looking for fresher dishes: do you want to try an ice cream prepared without milk or eggs? It's simple to make, even without an ice cream maker at home, and the taste… it's fabulous!


How to prepare vegan ice cream

In "homemade" ice cream, without an ice cream maker, the ingredients will be mixed in a blender and then left to rest in the freezer for about 30 minutes. The mixture will then be taken up again, blended again and placed again in the freezer to rest. This operation, which we advise you to repeat at least 3 times, is necessary because ice crystals form during the ice cream freezing process: breaking them will make the ice cream softer when we go to taste it. Obviously, with an ice cream maker or a blast chiller, these steps are not necessary.

Total time: 1 hour 50 min

Doses for: 4 people


Ingredients

  • 200 g of soy milk or rice milk or almond milk

  • 200 g of vegetable cream

  • 100 g of brown sugar ( 80 g if you want it less sweet)

  • 1 teaspoon of vanilla or cinnamon

  • (add 100g of Dark Chocolate if you want Chocolate Ice Cream)

Prepare the ice cream

Since there are no eggs it will not be necessary to pasteurize anything, just pour the cold ingredients into the blender and mix everything. To be sure, however, that there are no lumps in the mixture or that the spices have melted well, we advise you to bring the milk to a boil with the sugar, and the cream and add the spice making it melt well. Pour into a bowl and place it in your home freezer.


How many flavours?

Now you can indulge yourself with your imagination. If you want to prepare a vegan chocolate ice cream, melt 100 g of dark chocolate in a double boiler and add it to the ingredients. If you want to use other sweeteners, we recommend trying rice malt. We remind you, in the case of fruit ice creams, to replace the milk with water: you will create rich sorbets (in this case, use 300 g of the fruit you prefer).



storage

We recommend that you consume homemade ice cream, naturally stored in the freezer, within a couple of weeks.
